Dinner: mmmmmmmmm......oh yeah........
Nov. 1st, 2004 08:56 pmI've been trying this for months, and I finally got it to turn out the way I wanted. Rice, in the bottom of a baking dish. Broth poured on top. A layer of vegetable matter over that, tonight it was an onion, a small zuccini, broccoli, a spud I had leftover in the cupboard, and don't forget the garlic! Chicken breasts on top, and then the sauce. I had a jar of Tiger-Tiger brand tikka masala simmer sauce. This shit is TO DIE FOR. Really nice, flavorful Indian stuff that isn't scorching hot and spicy. (My personal motto: Food Shouldn't Hurt) I poured the jar of sauce over everything, baked it all for a little over an hour, and it was PERFECT! My whole apartment smells amazing! The rice was flawless, the veggies and bird boobs were great, the sauce permeated everything. I am SO FULL!
I'm sure I've said it before, my cooking is anything but low fat or the least bit healthy, but I feel like I've accomplished something when I do it from scratch. Tonight's dinner was by far the best rice/chicken/sauce/in the baking dish I've ever achieved.
Plenty of leftovers- come on over!
